*Baker: Monica and Jenny of Klassy Kakes
*Contact Information: klassykakes@bellsouth.net, and http://www.flickr.com/photos/klassykakes/
*Flavors and Fillings: Double Vanilla, Double Chocolate, Key Lime, Coconut, Guava Cream Cheese, Raspberry, Nutella, Pumpkin Dulce De Leche, Peanut Butter Cup, Red Velvet, Lemon White Chocolate, and many more.
*Pricing: $2 each. Customized decoration and Tower pricing upon request
1. Meaning behind bakery name? Klassy Kakes is an homage to the classic, sinfully delicious, white trash sweets such as Krispy Kreme (RIP), and Tasty Kakes- particularly Kandy Kakes.

2. How did you get started in cupcakes? After baking for friends and family for many years, I saw the 3 girls from Cupcakes Take The Cake on the Martha Stewart Show. I immediately signed up for the Cupcakes Take The Cake Blog and was flooded ( and still am) with inspiration from all of the cupcake bakers all over the world. Every day I see something on that blog that inspires me!!!!

3.What is your signature cupcake? Our signature cupcakes are the Key Lime and the Double Chocolate.

4. What is your personal favorite cupcake? Mine changes all the time- right now it's Coconut, and Peanut Butter Cup. Jenny's is the Chocolate Oreo.

5. What inspires you in your cupcake creations? Flavors from our childhood, and experimenting with different flavor combinations. We always love to experiment with new ingredients and decorating techniques to see which create the best cupcakes. We are constantly having cupcake throwdowns and making everyone around us vote on the best ones!

6. One reason cupcakes are awesome. Cupcakes are universal. They always put a smile on someone's face. Young, old- everyone loves a cupcake. I recently made a cupcake tower for a 90th birthday party. They just make you happy!

7. What do you think is the future of cupcakes? Now that cupcakes are more mainstream and very popular I hope to see more flavor innovations, more cupcakeries, and more cupcake trucks. It's a cupcake revolution!

8. What do you think is the funkiest cupcake creation? The tobacco cupcakes on Cupcake Wars for Duff's 100 show anniversary. YUCK!

9. What was your biggest cupcake disaster? I over-zested the key limes for a big order and discovered after I had baked and frosted them all that they were discustingly bitter. It turned into an all night key lime zesting and baking marathon! Have you ever zested a key lime- they're so tiny!

10. Share one cupcake making tip. Definitely never over-zest the any citrus! And also, don't drown your cupcake in frosting, it will overwhelm the cake that you took so much time to bake!

7. What do you think is the future of cupcakes? We think cupcakes will continue to evolve and take over the baking world. They are becoming works of art instead of just yummy birthday party treats.

8. What do you think is ‪funkiest cupcake creation‬? We once saw a salmon cupcake on Cupcake Wars that supposedly tasted good. Kayla and I wanted to gag. I don't think we'll be mixing fish and sweets anytime soon.

9. What has been your biggest cupcake disaster? One day we made about 130 mini cupcakes for my student organization, the Public Relations Student Society of America, and we left them in a sealed box in a humid room. 10. Share one cupcake making tip. Make recipes your own! Try crazy flavors and decorate elaborately. Pretty much, let your imagination run wild and don't limit yourself.

The most meaningful inspirations have come from the ones who loves my Cupcakes. I'm always receiving ideas, suggestions and challenges from them and that is where it all comes from.

Baker Spotlight: Sweet P Cupcakes

Baker Spotlight
*Baker: Sweet P Cupcakes, Cakes & More
*Contact information: Jaclyn Pruna-Paskow and Jocelyn Pruna, sweetpcupcakes@hotmail.com. Blog and Facebook
*Flavors & Fillings: If you can dream it, we can bake it!
*Pricing: $1 for minis & $2 for regular sized

1. Meaning behind bakery name. We wanted our name to mean something special to us. Since our last name is Pruna (and Jaclyn's married last name also starts with a P) we decided to incorporate the P and put the word "Sweet" in front of P. "Sweet P" is a fun and easy name to remember and say.

2. How did you get started in cupcakes? We are two sisters with full time jobs that have a love for baking sweets and art. We've always been obsessed with baking cookies, cakes, and pies, however cupcakes seemed to be our favorite thing to do. We begun taking decorating classes and watching videos online and started making cakes and cupcakes for our family and friends as a hobby. Once the pictures of our creations hit Facebook, we begun getting orders all over south Florida.

3. What is your signature cupcake? Red Velvet Cupcake with Cream Cheese Frosting

4. What is your personal favorite cupcake? Oreo Cookie Cupcake with Cookies N' Cream Frosting.

5. What inspires you when it comes to your cupcake creations? Our Client (whether it be family, friends, or a stranger). We absolutely LOVE to hear the story behind the guest of honor or our client's celebration in which they are ordering for. We like to see their invitation, and any decoration ideas so that we can get a feel of exactly what they want for their special day or special person.

6. One reason why cupcakes are awesome. Cupcakes are awesome because they are just the right size to satisfy everyone's sweet tooth, you can have one every week without hurting your wallet, and so easy to eat, no napkin required!

7. What do you think is the future of cupcakes? The future for cupcakes looks sweet! It is not a "trend". Cupcakes are here to stay and we strive to create new flavors and styles so that there is always something to look forward to.

8. What do you think is ‪funkiest cupcake creation‬? Our Bubble Gum buttercream cupcake. This was just as much fun to eat for the adults, as it was for the kids. Once you bit into the cupcake, it was a wonderful tasting the bubblegum, and realizing you get to actually eat and swallow this delicious flavor.

9. What has been your biggest cupcake disaster? When we made golf themed cupcakes for Jaclyn's father-in-law's birthday. Once we finished the long process of decorating them, placing them in the shape of a golf course, and taking pictures for our website, we placed the cupcakes in a single box. As we carried them to the front door, the box completely collapsed down the middle and all the cupcakes came tumbling down, and were ruined. Couldn't do anything but laugh it off, and start baking again!

10. Share one cupcake making tip. Take a small spoon full of the batter before you begin baking to taste it. Not only will this let you know if you've missed any ingredients, but it sure is fun to eat.

Baker Spotlight: Clarabelle's Cupcakes

*Pricing: Mini $1.00 each, $12.00 per dozen. Large $2.50 each, $30.00 per dozen.

1. Meaning behind bakery name. I NAMED THE BAKERY AFTER MY DAUGHTER, CLAYRE (NOW 15 YEARS OLD), WHO WAS BORN WITH GALACTOSEMIA - A CONDITION WHICH PROHIBITS HER FROM EATING DAIRY. SHE WAS MY INSPIRATION TO DEVELOP DAIRY-FREE DESSERTS THAT ACTUALLY TASTED GOOD! ONE OF MY NICKNAMES FOR HER IS "CLARABELLE".

2. How did you get started in cupcakes? CUPCAKES HAVE ALWAYS BEEN ONE OF MY ABSOLUTE FAVORITE DESSERTS! SOMETHING ABOUT THEM JUST MAKES ME HAPPY. BELIEVE IT OR NOT, TO THIS DAY, I CANNOT WALK BY A CUPCAKE SHOP WITHOUT SAMPLING A FEW. I MUST'VE MADE MY FIRST CUPCAKES WHEN I FIRST STARTED BAKING - AROUND 7 OR 8 YEARS OLD. WHEN MY KIDS WERE YOUNG AND I WANTED TO BRING BIRTHDAY CUPCAKES TO THEIR (JEWISH) SCHOOLS, THERE WERE NO KOSHER CUPCAKES AVAILABLE, SO WHEN I DECIDED TO OPEN A BAKERY, I JUST FIGURED I'D OFFER A FULL BAKERY MENU, BUT FOCUS ON CUPCAKES.

3. What is your signature cupcake? OUR BESTSELLING CUPCAKE IS ACTUALLY VANILLA WITH VANILLA BUTTERCREAM, FOLLOWED BY OUR RED VELVET IN CLOSE SECOND PLACE....BUT I THINK OUR "SIGNATURE" CUPCAKE IS PROBABLY OUR CHOCOLATE CREAM-FILLED CUPCAKE WITH GANACHE FROSTING...A LA the "HOSTESS CUPCAKE".

4. What is your personal favorite cupcake? FOR ME IT CHANGES DEPENDING ON MY MOOD. SOMEDAYS, I REALLY FEEL LIKE A PINKALICIOUS BUBBLEGUM CUPCAKE. OTHER DAYS IT MIGHT BE A TROPICAL HUMMINGBIRD CUPCAKE WITH CREAM CHEESE FROSTING. RIGHT NOW, I COULD EAT A BAVARIAN CREME-FILLED GLAZED DONUT CUPCAKE!

5. What inspires you when it comes to your cupcake creations? I AM INSPIRED BY MANY THINGS - MY CUSTOMERS ESPECIALLY. I LOVE WHEN THEY CHALLENGE ME AND ASK IF I COULD CREATE THEIR FAVORITE FLAVOR. I ALSO GET A LOT OF INSPIRATION FROM ALL OF THE NEW CUPCAKE SHOWS ON TELEVISION. LASTLY, I'M ALWAYS LOOKING FOR WAYS TO CREATE FUN FLAVORS THAT MAKE US STAND OUT AS A CUPCAKE SHOP.....SMORES SUNDAE CUPCAKE, VANILLA-ORANGE CREAMSICLE, MINT MOJITO CUPCAKE....

6. One reason why cupcakes are awesome. CUPCAKES ARE AWESOME BECAUSE IF THEY ARE MADE RIGHT (AND EVERYONE HAS A DIFFERENT CRITERIA FOR WHAT "RIGHT" IS), YOU GET A SINGLE PORTION OF THE PERFECT CAKE-TO-FROSTING-RATIO AND YOU DON'T NEED TO SIT AT A TABLE OR USE A FORK TO EAT THEM!

7. What do you think is the future of cupcakes? I THINK CUPCAKES HAVE BEEN AROUND FOREVER AND WILL CONTINUE TO BE AROUND FOR A LONG TIME. THERE WILL ALWAYS BE PEOPLE LOOKING FOR CRAZY FLAVORS AND THOSE WHO WANT A CLASSIC FLAVOR....CUPCAKE STORES WILL MOST LIKELY PLAY AROUND WITH SIZING AND NEW WAYS TO PRESENT CUPCAKES (ON A STICK, IN A CONE, CUT IN HALF WITH FROSTING IN THE MIDDLE) BUT AT THE END OF THE DAY, EVERYONE LOVES A QUICK, FRIENDLY, FUN DESSERT AND CUPCAKES FULFILL ALL OF THOSE QUALITIES!

8. What do you think is ‪funkiest cupcake creation‬? I GUESS YOU ARE ASKING ABOUT MY FUNKIEST CUPCAKE CREATION? MAYBE CINNAMON FRENCH TOAST WITH MAPLE BUTTERCREAM AND CARAMEL DRIZZLE?

9. What has been your biggest cupcake disaster? I THINK MY BIGGEST DISASTER WAS WHEN I TRIED TO MAKE A NON-DAIRY BLACK-BOTTOM SWIRL CUPCAKE WHICH IS TYPICALLY MADE WITH CREAM CHEESE IN VANILLA SWIRL PART OF THE CHOCOLATE BATTER. I WAS EXPERIMENTING WITH DAIRY SUBSTITUTIONS AND THE CUPCAKES LOOKED FINE WHEN THEY GOT OUT OF THE OVEN, SO I SOLD ONE TO A CUSTOMER WHO WAS WATCHING ME (WE HAVE AN OPEN KITCHEN) AND INSISTED SHE WANTED TO BE THE FIRST ONE TO TRY IT. AFTER SHE LEFT THE STORE I CUT ONE OPEN AND IT WAS RAW AND GOOEY INSIDE. YIKES!

10. Share one cupcake making tip. AN ICE CREAM SCOOPER IS THE BEST WAY TO PORTION BATTER INTO CUPCAKE PAPERS IN ORDER TO ASSURE AN SIZE CONSISTENCY AND A CLEAN PAPER CUP BORDER. I AM CONTINUALLY AMAZED BY HOW MANY PEOPLE WATCH ME USE A SCOOPER IN THE BAKERY AND TELL ME "I NEVER THOUGHT OF THAT!".

Baker Spotlight: Contenti Cupcakes

Baker Spotlight
*Baker: Alejandra of Contenti Cupcakes
*Contact information: 786.395.1787, contenticupcakes@hotmail.com
*Flavors & Fillings: Selection includes vanilla, chocolate, key lime, pumpkin, and pink lemonade. For the rest of the selection go HERE.
*Pricing: $24/dozen for the regular size. $12/dozen for the minis (minimum of 2 dozen).

1. Meaning behind bakery name. Contenti is my last name, which in Italian means "happy", so I thought, cupcakes make everyone happy so Contenti Cupcakes it is! :o)

2. How did you get started in cupcakes? I started baking them donating them to the bake sales at my kids school.

3. What is your signature cupcake? I would have to say the Caramel Crunch.

4. What is your personal favorite cupcake? Hmmm....I can't say I have a personal, it depends in the mood I'm in when eat them, sometimes it could be Red Velvet, other times chocolate....they are all good!

5. What inspires you when it comes to your cupcake creations? Food! I love to cook and I love to eat! So when either I watch a cooking show or eat out at a resturant and there is something that calls my attention I think about how I can make it into a cupcake.

6. One reason why cupcakes are awesome. They are individuals....like the ones eating them :o)

7. What do you think is the future of cupcakes? BRIGHT!!!

8. What do you think is ‪funkiest cupcake creation‬? I've seen some crazy stuff out there, somethings that are probably better left off a cupcake :o)

9. What has been your biggest cupcake disaster? There was this one time when I was making red velvets and I kept forgetting an ingredient...first the eggs, second batch the sugar, third batch the salt. It was very frustrating but at the end all I could do was laugh.

10. Share one cupcake making tip. Don't overbake, take them out about a minute shy, they will finish baking while cooling :o)

1. Meaning behind bakery name. by.Ivonne Cake.Love.Couture really just says it all when it comes to my cakes and cupcakes.  Having my name as part of my shop's name was something I always wanted.  Cake.Love.Couture came to be part of the name when I was asked to describe what by.Ivonne was all about and the best response that came to mind that day were these three little words.  At by.Ivonne we are all about delicious Cakes made with Love and Speicalize in Couture flavors and designs.

2. How did you get started in cupcakes? My story is simple. It started with a love of food, fashion, and a passion for all things sugar.  I fell in love with the cupcake after trying one for the first time on a vacation with the family.  As soon as I got back to Miami I got to work on experimenting with recipes on my free time from working in the fashion industry and began to bake for friends and family events. I was facinated on how creative you can get with a cupcake.   After meeting my amazing husband who is a member of the National Guard, I found myself with extra free time when he was away on orders, so I pursued courses in cake design and decorating and took up baking and designing cupcakes fulltime.  This is how by.Ivonne Cake.Love.Couture began. I fell in Cupcake Love... and I hope you will too!
3. What is your signature cupcake?
A Guava infused Vanilla Cake with Vanilla Cream Cheese Frosting.
4. What is your personal favorite cupcake? My personal favorite is a classic Red Velvet.  Simple, yet always delicious.

5. What inspires you when it comes to your cupcake creations? Fashion, Pop Culture, The Seasons, The City, Travel, Kids... So much goes into creating my cupcakes and flavors.  I am constantly reading and following up with the latest trends and I enjoy getting feedback from my husband and fabulous customers who come to me with flavor requests all the time. Taking popular flavors and turning them into new cupcakes. Whether you are a fan of simple cupcakes or if you want an amazing flavor no one has thought of yet.  No matter what, there’ll be a cupcake for you.
6. One reason why cupcakes are awesome. Cupcakes are awesome because you can enjoy two or three...(or four) of your favorite flavors in tiny cakes without having to only pick one flavor as you would for a cake.  They also look good and are so easy to serve. Cupcakes at an event are always a hit!

7. What do you think is the future of cupcakes? The future of cupcakes is still going strong and I think will continue to just get better..Staying ahead of the cupcake trend is a must.  Bakers are getting more creative everyday to come up with new flavors, and to offer unique flavors and designs.  To think that the appearance of cupcakes on the still popular TV series Sex and The City, took cupcakes this far...I am excited to see what the future of cupcakes will take us.
8.What is the funkiest cupcake creation? Goat Cheese Frosting cupcake.. But really, Funky to me is when you move away from traditional vanilla and chocolate flavors and get creative with ingredients and the dress up of your cupcake.  Be it a cotton candy or goat cheese cupcake, presentation is everything.

9. What has been your biggest cupcake disaster? Overfilling the cupcake liners and ending up with a huge mess in the oven!

10. Share one cupcake making tip. Test your cupcakes by baking a trial batch first before baking your final batch.

Baker Spotlight: Sweetness Bakeshop

Baker Spotlight

*Baker: Stephanie of Sweetness Bakeshop & Cafe
*Contact information: 9549 Sunset Drive, Miami, FL 33173, info@sweetnessbakeshop.net, 305-271-7791
*Flavors & Fillings: Selection includes chocolate, vanilla, banana split, caramel apple, Snickers, and margarita. For the rest of the selection go HERE.
*Pricing: Minis $1, Regular $2, and Jumbo $3

1. Meaning behind baker/bakery name. When we were first thinking of names for our store, we must have had a list of about 200 potential names, the one word that summed us up was “Sweetness”, our goal is to fill our customers days with a little sweetness whether it be in the form of a cupcake, cookie, gelato, sandwich, anything, we hope that just simply stepping foot in through our doors makes your day a little sweeter. Funny enough, we finally decided upon the name “Sweetness” during a 7th inning stretch of a Florida Marlins baseball game.

2. How did you get started in cupcakes? Sweetness is a family run business, my brother and I grew up watching my mom bake, and like most kids, thought we were helping lol. About 3 years ago, my mom and I started baking & selling cupcakes out of the house as “A Piece Of Cupcake”, the time came that we were producing so much we didn’t fit in our house anymore, I was getting ready to graduate from FIU and we thought the timing would be perfect to open a storefront.

3. What is your signature cupcake? Some think it’s our Guayabera, others think it’s our Maple Bacon or Irish Car Bomb, we don’t have one cupcake that we classify as our “signature”, we like to think that all of our 150+ flavors are our signature cupcakes, our flavor selection is part of what makes Sweetness what we are today.

4. What is your personal favorite cupcake? Believe it or not, I really don’t eat many cupcakes, but when I do, my favorite is Chocolate Covered Strawberry or Thrilla In Vanilla.

5. What inspires you when it comes to your cupcake creations? Everything around us plays a factor into the flavors we develop, we’re very inspired by pop-culture, we’re very into using seasonal fruits…and yes, even vegetables. One of the biggest inspiration for our flavors is actually our customers, they make recommendations and requests and we do our best to meet their expectations!

6. One reason why cupcakes are awesome. They’re a bite sized dessert, and you don’t have to share! It’s like your own personal piece of heaven.

7. What do you think is the future of cupcakes? It’s hard to predict, journalists have been saying for years that it’s a dying trend, but I only see it getting stronger, the key is to be unique and stand out from the rest, and I think we do a pretty good job at it.

8. What do you think is ‪funkiest cupcake creation‬? I can only speak for what’s been done in our store, there’s been some pretty crazy stuff made in our kitchens that our customers have never tasted. Such as popcorn cupcakes, it was a cupcake that literally tasted like you were eating a bowl of popcorn, we also made a buffalo blue-cheese cupcake, it was a cupcake made with hot sauce and the frosting was a blue-cheese/cream cheese frosting. Outside of our bakery, I think Bleeding Heart Bakery in Chicago, IL is BRILLIANT!

9. What has been your biggest cupcake disaster? I don’t like to call them disasters, more like learning experiences, the first time we made our crème brulee cupcake, we actually tried torching the sugar directly on the cupcake, and well…we ended up with burnt cupcakes…needless to say we’ve re-worked that and it’s now one of our most popular cupcakes.

Baker Spotlight
I've reached out to all the local bakeries and I am patiently awaiting their responses (how exciting!). I am going to ask all participating bakers to answer a few questions and feature them here on the blog. This will be a great way of getting to know something about the person behind the cupcake because behind every great cupcake is an even greater baker. Without further ado, here are the questions:
